Abstract
After being harvested, before being sold or consumed, sweet potatoes need storage treatment so that they are not easily damaged. This study aims to determine the storage period, physical and chemical changes of sweet potatoes stored in sand. Sweet potatoes are put into sand with a sand diameter of ± 2 mm. The position of the sweet potatoes at a depth of 0, 5, and 10 cm from the surface of the sand, Another treatment is that the container is cooled with water and without cooling.Then observed changes in weight, temperature, total dissolved solids (TDS) and storage period. The results showed that the temperature in the sand was 27-28 oC, sweet potatoes lost weight by 90%, there was an increase in TDS by 4%, storage period was 36 days. The problem during storage was that some plants began to sprout on the 15th day. The shelf life of sweet potatoes in sand is longer than storage in open spaces.
